Sommelier Jez Shiell delivers a refreshingly honest list at Bottega, deliberately slimming down the offering into something more accessible, with a better blend of international and Australian-made wines to match the menu's classic Italian flavours. There are still plenty of Tuscan favourites, a full selection of Nebbiolo and a tidy selection of grappa, but also a nice selection of Victorian takes on Sangiovese, Vermentino and the like.
